Healthy Quinoa & Supergreen Salad

Ingredients

Quinoa                                      2 cup

Asparagus.                               1 bunch

Broccoli.                                    10 oz

Cherry tomatoes.                     1 cup

Orange.                                      4 no

Parsley finely chopped.           2 Tbsp

Lime.                                           1 no

Honey                                         2-3. Tbsp

Method

  • Add quinoa to boiling water and cook for around      8-10 minutes. Strain and set aside
  • Heat water in pan add salt and squeeze 1 lime     & boil the water 
  • Add broccoli and asparagus to boiling water and cook for approx 4 minutes. Make sure during cooking do not cover .When cooked, strain and soak in cold water bath (1/2 ice half water) helps in retaining natural deep green color
  • Add quinoa and vegetables to a serving bowl with the cherry tomato halves 
  • Mix orange juice, honey & lime juice together and pour over the salad
  • Serve this salad either plain or with cooked meat of your choice
